Ham Fried Rice


This was so quick and easy I’d suggest you could make in the same amount of time that it would take to have one delivered.
I used ham and the veggies I like, however you could use what ever meat you wish, or even leave it out for a vegetarian option.

3 cups cooked, cooled rice
3 eggs
1 cup peas
1 cup sweetcorn
1 cup broccoli (chopped)
1 cup Peppers (chopped)
1 cup Onion (chopped)
1 cup ham (chopped)
3-5 tbsp Soy Sauce
Salt & Pepper to taste


Fry the Peppers, onion and broccoli until softened

Add the eggs and stir continuously until eggs are cooked through and scrambled

Add the Ham, peas and sweetcorn stir for about 1 min

Mix in the rice, add Soy Sauce and season to taste.
Continue to cook until rice is warmed through and serve.

This makes 5-6 servings, so plenty left over for the freezer
