Baked Eggs and Avocado

Awesome way to get some healthy fat and protein. They Warm up in the microwave fine too.

Ingredients
1 Avocado
2 small eggs
Salt & Pepper

Method
Halve the avocado and scoop out a little of the flesh to make room for the egg.

Place in a baking tray and crack the eggs into the holes. I found it best to prop them in the corners as shown in photo. Don’t worry if you spill a little egg as it just bakes the same, just maybe doesn’t look as good.
Add a little salt and pepper then place in a pre-heated oven for around 15-20 mins (until the eggs are cooked through)

You can garnish them with a little paprika or herbs of your choice. I had mine with a nice home-made salsa.
