Awesome simple breakfast that can be made in advance and kept in the fridge/freezer for a tasty, nutritious grab and go Meal.
500g Turkey Mince
Vegetables of your choice (I’ve just used peppers in this one but anything goes)
Salt, pepper, herbs/spices of your choice.
Fry off the mince until cooked through
Add your vegetables and continue to fry until softened to your tastes
Season to taste
In a bowl whisk up the eggs and add to frying pan stirring gently to ensure even mix.
Once there is a good crust on the bottom then transfer to a pre-heated grill and leave until cooked through.
Now simply portion up and store or eat.
