I was first shown this recipe by a client asking if it was OK and on plan. I was about to go into a big rant about “paleo treats” and how if you need to put the word paleo to anything then chances are it’s not. Fortunately I looked at the recipe and liked the look of it, not because it was “paleo” or anything else, but rather it looked simple and tasty and a great alternative to those craving biscuits.
Whilst we follow a paleo template for the vast majority of our clients, we have evolved it and are not quite as strict as many so although these are not for everyday eating, life is for living and they will make an excellent occasional treat or post workout snack.
Ingredients
1 large banana
60g Coconut flakes or shredded coconut (pure coconut NOT dessicated)
Method
~ Pre-heat oven to 175 degrees
~ Pulse ingredients in a blender until thoroughly mixed
~ separate into disc and place on greaseproof paper or cookie sheet
~ Bake in oven for approx 25mins (I flipped them over after 15mins)
That’s it… Simple, quick AND tasty.
