Roasted Veggies w/Bacon

This recipe is Super simple but extra tasty. Just chop up you veggies so they are all roughly the same size. I used carrots, parsnip, broccoli and leeks today but you can use most any veggies you fancy. Season to taste, cover with smoked streaky bacon. Drizzle over some olive oil just to get it started. Place in centre of oven at 200•c until cooked to your taste.
The great thing is the bacon fat cooks the veg and flavours it slightly but also protects it from charring so you get soft, super sweet veggies. The leeks came out particularly soft and sweet.
That’s it simples.
