Pan-Fried Chilli & Salt Octopus

This one is super simple.
Just wash the octopus (it’s best to let your fishmonger prepare it) then season with sea salt and ground chilli flakes.
Place it in a hot griddle pan with a little olive oil. You can tell when it’s done because the tentacle ends will go pink and you’ll get the grid marks from the pan.
I like to eat it as a snack so don’t really bother with much dressing etc. but it is nice with some garlic mayo as a dipping.
