For week 1 of my 52 flavours challenge I tried Sticky coconut rice. The recipe came courtesy of Jamie Oliver’ 15 minute meals and was super simple.
1. Empty a can of coconut milk into a pan
2. Fill the now empty can with rice and add to the pan
3. Fill the can with boiling water and add to the pan.
4. Boil and Simmer until water/coconut milk has been absorbed.
I ate this with my favourite meatball’s in tomato sauce recipe (I’ll post this soon) and all I can say is this is THE only way I will be cooking my rice from now on.
Best of all, this fits perfectly with Carb Backloading.
